I just received this today. It came with a V-shaped clip with a small hole on each side. I don't see any mention of this clip, so what is it used for?

Use that with a smoker which will have a lid on it. The built-in thermometers on smokers lids are usually not very accurate. Put the clip on the smoker grill before the grill is hot, and insert the probe and wire somewhere in the middle but in a place where it will not touch the meat. Try to keep it a couple inches away from the meat, which is going to be cold and will fool it. Use that probe to monitor the temperature inside the smoker. Use the bottom and side vents of the smoker to adjust the heat up or down. Leave the top vents open.

what is the length of the probe?

The probe is 8.5" with a cable length of 40" (3' 4") 2 probes with cables included

The length of the probe is given as 8.5" but iTronics answer says 6.5". I need 6.5" straight, not bent, probe. Is this it?

The thin probe itself is 6 1/8 inches long; total length of the piece including the knurled end (from point to the wire) is 8 3/8 inches.

Will the device work if only two out four probes are plugged to the device? Idea is to keep other two as a spare.

Yes. The probes are independent. I have used it with (1) probe plugged in.
