Is the ring binder removable?

Yeah, but not without damaging it. If you want to use it as a journal cover, however, and the spine of your notebook is going to cover it anyway, then it doesn't matter really? I cut the ring binder out with a cutting knife and although I tried, I couldn't make it look pretty. But When I put my journal in I can't' see it anyway, so I'm super pleased with it. I posted photos on my review. :)

There’s cardboard behind the metal rings. do i simply tear that off? cut it off ? is it shipping protection?

Pull it out. It's there to keep the rings from damaging the notebook in shipping.

Up to how many pockets can it hold?

Did you mean pages? As far as pockets it has some on the front inside which are good for like business cards. The back has one to slide in extra pages.
