Handle with care!
Ever since I was a kid, I've been one of those people who can't wear a watch for more than a few days because it'll stop working or the batteries go dead too quickly or whatever. And whatever that weird magnetic field is, it apparently also dulls knives. I cannot KEEP a knife sharp in my house. My grandfather was a butcher, so I know how to use, maintain, store, and sharpen knives, but they just go dull despite my best efforts.I think that problem is now SOLVED.When I opened the package, I saw that the knife was in a very nice leather-ish sheath, with a strap secured by a snap. I opened the snap and withdrew the knife, holding the sheath between my other fingers while I inspected the knife.It looked and felt sturdy and solid, with a comfortable handle of dark wood or wood-like material. The rivets are all smooth and well-seated, although the tang protrudes by perhaps 0.5-1 millimeter - not enough to notice visually, but noticeable to touch. The blade itself has a pebbled texture to the upper surface, and the knife as a whole feels well balanced and comfortable to work with.I turned the knife to (carefully!) test the edge with my thumb, and heard a small thunk of something hitting the floor - probably a packet of silica granules, I thought, noticing that there was also a bit of plastic inside the sheath that hadn't come out with the knife blade. The blade felt good and sharp, and I was proud of myself for not slicing off my thumbprint (whew!), so I put the knife back into its sheath and went to snap the strap back in place.The end of the strap with the snap was gone. That little thunk I'd heard hadn't been a silica packet - I hadn't noticed it, but when I turned the knife in my hand, the blade had sliced through the strap of the sheath with NO resistance whatsoever. I didn't even know it had brushed up against it, but it cut right through like it was butter - no, like it was water! Or air! Looking at the piece of the strap on the floor, I immediately thought of all the cartoons I'd watched as a kid, where someone's arm gets chopped off but doesn't fall off until later, and had to check my thumb again in a panic to make sure it actually WAS still in one piece. (It was. Double whew!)I've been using the knife for about two weeks (not daily but about 3-4x a week) and before typing this review, I pulled out the sheath again. On purpose this time, I sliced an edge of the sheath handle - and once again, it cut right through like a baby's sigh. No resistance whatsoever - as sharp as the moment I took it out of the package.This knife seems to have broken whatever curse it is that dulls up all my other blades! I've gotten rid of several similar (dulled) knives, and will be looking at more knives by this company to replace my other knives.If half-stars were possible, I would deduct a half-star for the tang protruding from the handle that tiny bit. However, it's likely that this is something that I'm more sensitive to than most people would be (I have sensory issues), and also likely that with continued use it will smooth out and become less noticeable. Again, it's only barely visible to my eye (at the very heel of the handle, where it's not much of an issue anyway), but it is something I can feel when I'm using the knife. I think two or three more passes at the polishing/smoothing stage would solve that issue.

Sharp Performance, Questionable Design
I like this knife, but I don’t love it. It's incredibly sharp, and although it’s still early to judge its long-term sharpness, my initial impression is that it should handle most tough tasks with ease. I used it for delicate cuts on produce, and it performed well—while it's marketed for meat, I appreciate how easily it can make thin slices.The build quality is excellent, with no risk of the blade detaching from the handle. It's slightly heavier than expected, which enhances the grip and gives me more control when using it. However, while the knife's performance is impressive, the design leaves something to be desired. The black stone on the opposite end of the blade feels unnecessary. It doesn’t add any functional value and, in my opinion, doesn’t improve the look either. I would’ve preferred a sleek, all-steel blade. Additionally, the word "Japan" stamped on the blade feels unnecessary as well; a truly high-quality Japanese knife wouldn’t need to state its origin. What’s more, the knife doesn’t explicitly state that it’s made in Japan—only that it's crafted using Japanese techniques. These design choices make the knife seem more like a souvenir than a tool for daily use.That said, these aesthetic choices don’t affect the knife’s functionality. However, the leather sleeve it comes with does have a design flaw. While it offers solid protection and is easy to use, the strap sits directly over the blade’s exit point. If you don't hold it back, the blade cuts through the strap like butter, rendering it useless. It’s almost as if the sleeve wasn’t made for such a sharp knife. Also, the display box is a bit small, and doesn’t close evenly when the leather sleeve is inside.These design issues don't impact the knife’s quality, but they do detract from the overall experience. I might end up discarding the sleeve and box, as the knife would fit in well with my other Japanese souvenirs. For everyday use, though, I’d prefer a simpler design.
