These trays work well especially for freeze drying cheeses. They fit perfectly in the medium harvest right trails. Easy clean up.

Pay attention to the size. It takes 3 each to cover each tray. I didn’t realize and had to order more to accommodate all my trays.These work really well to be able to double layer thin slices of stuff like carrots, potatoes or tomatoes etc. it allows the air to flow and you can double your capacity as long as you don’t stack higher than the tray sides.

While freeze drying fruit which typically can take longer due to high moisture content these allow for more surface area to be exposed to shorten the drying time

These trays arrived warped, so when putting them on the tray, they were moving all over the place. I thought the weight of the food would help and they would eventually flatten. But instead, the food was sliding around on the rack and the rack was sliding around on the tray, and it just made the situation worse. These are a GREAT idea - the food doesn't stick to the plastic, and air would circulate better. But not on a warped rack.
