Q: What is the material and max continuous temp of the insulation on the thermistor wires (nearest to the bead)?

I have set mine to 275 C with no problem

Q: What is the max temperature of these thermistors?

I'm sure the limit would be less than 300 c. I have a Slice thermistor rated at 300c but it cost more twice as much.

Q: What is the material of the sensors? Can they work with a pH of 11?

Short answer, no. You have to encapsulate these in epoxy or some other corrosive resistent casing for them to be in hydrated environments, especially corrosive environments. These are ment to be mounted on a surface for temperature monitoring. Hope this helps.
