Excellent Knife with Excellent Edge Retention
To begin with the blade came in nice and sharp and has for 3 months held its edge insanely well. As expected of VG-10. Its been about 3 months since I started using it almost daily and I can feel the edge starting to dull A LITTLE on the Chef Knife in specific but it still definitely has multiple months until I need to resharpen. I have their other paring knife that I use everyday and its edge has held perfectly more than this one but of course I don't do any chopping with the paring knife so that should be considered. I do however do quite a bit of chopping with their Nakiri and that knifes edge has held perfectly so I'm inclined to believe maybe the burr wasn't fully removed from the chef knife and that's why it's edge retention has declined more than my other knives from this brand but otherwise this knife is amazing especially for the price. An easy fix to remove the burr properly so its no big deal!

Yeah, It Cuts Like a Knife
"Damascus" knives are popular and polarizing; what exactly does and does not constitute a "real" Damascus steel knife is debated by some people.Not going to jump into that regarding this HOSHANHO Damascus Chef Knife except to say I can't find any evidence this one is being faked via etching or other tricks. That would probably place this into the category sometimes called "welded steel Damascus".Out of the box this is respectfully sharp. If you know how to sharpen you'll no doubt be able to do better but for the average consumer you'll be satisfied. Treat it well (always use a cutting board, preferably wood, always clean by hand, wipe dry after washing), touch up the edge occasionally with a steel and you'll be fine for a while.This is a heavy knife in the hand, with the balance mid-bolster. With use it'll no doubt feel better but moving from a much lighter blade this one feels a bit clumsy and lacking in feedback. It's cut everything I've thrown at it though, just like a general purpose knife should. The blade is a true 8" in length so do not think their measurement is including things south of the heel - it's a solid, big knife for the kitchen.The olive wood handle is a nice bit of neutral contrast to the high degree of patterning on the blade itself. Very simple, perfectly fit with no gaps. I'm not sure it has any finish - it's well sanded but has excellent grip and feels much like it's raw wood. Since you don't want a slippery sharp thing this should be considered a positive.Overall, a solid if not outstanding knife.

NOT Japanese
This is advertised as a Japanese knife but It is made in China. I guess that given the cheap price I should have expected that it was not a real Japanese knife. I'm keeping it as it seems to work well. I can only wish for honesty in advertising.
