Q: What is the anti stick coating made out of?

I do not know. Something rather like Teflon. What I do know if that the eggs still tended to stick, and it is impossible to pick up the cups once the eggs are cooked without burning your fingers. Maybe I'm just a klutz, but I never figured it out, and the device went out in the trash. Sorry to be so negative, but this was one of my poorer purchases.

I think you can use on induction cooktop.

Q: In the description it says bakelite knob on lid and cups, but in the pictures they are stainless with what appears to be a plastic knob on the plate?

The knob on the egg cup tray is a black plastic so it may be bakelite. The knob on the cover is stainless steel. It does get hot when poaching eggs so requires using a potholder. This is a great product. Have used it many times. No instructions. Four minutes is right for 2 eggs and 5 to 6 for 4 eggs. If you get mineral build up in the pan from your water just fill it with water and vinegar and it will dissolve the mineral coating.
