Q: What is the material its made from?

It’s not real leather......faux leather. Possibly vinyl .

Q: Can you attach iron on patches without it melting?

I dont see why you cant, if you are attaching them to the inside. If you are adding to the outside I would probably use a press cloth to protect it. Test the heat of the iron first on a spot not so noticeable like the staple near the bottom.

Q: The top flap has a smell, like fish, how do you get rid of it?

I had the red one, didn’t smell but this is so heavy I gave the whole thing away.

Q: How much weight can the bag hold?

I'm not sure about the weight, i use the bag for my laptop, pad, etc., and it works great, Its slim so i wouldnt over pack it.
