Q: how high up do they go? from closed to open?

17" on my hope chest to 22" when opened. It's a little lower than I would like, but I really like it.

Q: How much weight do you need for it to stay in the closed position?

Once the hinge is fully closed (table top is down) there is no weight needed to keep it closed except the weight of the table top it self.

Q: Are these suitable to convert a regular writing table to a sit/stand desk? To be clear, I don’t want to use them for a coffee table.

These brackets only lift about 10-12” Which is great for a low table but having used a sit/stand desk it seems one needs about 24-30” raise.
