Purchase hog rings and pliers to crimp the rings on. Or twist bag at top and tie with bread bag type twist ties. You will want to stuff these with a stuffer or a stuffer horn on your grinder to get the meat air free to protect from freezer burn. :)

Do you have to use their tape machine too?

You could use some other method to close the bags (ie hand tape or twist tie), but the tape machine makes the process so much easier and faster.

These are plastic storage bags for freezing your ground meat. No not oven safe.

Are these bags bpa free?

I use the one pound bags. It doesn't say if they are bpa free. I would suggest contacting LEMproducts to see. I have used them for years with no problems.
