Q: Is this plastic similar to the type you store food in?

It’s similar to the plastic used for drawers in a refrigerator. It’s hard plastic.

Q: Since the handles go in, what is the actual measurement of the space available from the indented handle to handle?

Only one end goes in and the other end goes out. I assume to be able to slide one end into the other. As for usable space it’s a little over 10-1/2 inches long and 5-3/4 inches wide.
