Will this hold up well to play by a 5 year old?

Great question, truthfully, this is a model that even for an adult is rather intricate and required time and patience too build. The end product is really something I've enjoyed. In fact, I'm looking at it right now. I've painted it myself and doing so makes for a more enjoyable end product. This model is a joy too make but is not made of hard plastic like the boba fett from the 6 inch black series. I would recommend the black series for a 5 year old too play with, but not this model.

Do his leg pouches hinder leg movement or do they adjust?

Although the leg pouches hinder some movement they do adjust to allow more movement than the Hasbro black series figure.
