Do u steam them with lids on ? Christmas pudding wise..?

Hi Yes you can leave lids on whilst steaming, the are not airtight, so the steam can escape during cooking process as the pudding expands. Do not cover or wrap the lids and of course keep topped up with boiling water and never let boil or steam dry.

Would 1 pint be suitable for single portion steak puddings or should I get 1/2 pint ones?

No, 1 pint basins would make a Christmas pudding for 4 people (with it being so rich) , also, the 1 pint would be suitable for two people for a good sized portion of steak pudding, the 1/2 pint would be more suitable for you as a single portion.
