Because its a monitor for gaming

Q: my monitor has only been able to go up to 120hz even tho its advertised as 144hz, is that normal?

You need to use display port for anything over 120hz or check you settings

Q: Is the monitor compatible with Playstation 5 and Switch?

Most definitely, however the Switch may only be 30-60 FPS depending on the game.
