There real deal
I've ordered this cheese repeatedly and I've always been very happy with the delivery service (packed with cold packs) and the delicious Montasio cheese inside. I make Frico during the holidays and we all love it. I have relatives in the Friuli region and I've had the Frico there. I learned that there are two kinds of Frico, the thin style, and the thick style that I had at restaurants in Friuli. The Frico disk that one encounters with the thick style is 3/4 inch thick! it's a delicious cheesy nirvana. I don't have the knowledge or skill to make the thick preparation, but the thin style is just as good in a different way. Just watch Lydia Bastianich make this dish on youtube. You'll see how it's done. A trick that I discovered to make the process easier is this: after the first side is browned, place the bottom of the pan in ice water to cool it off. After a minute in the cold water, it's much easier to flip the disk over to cook the other side. It might be cheating, but there you go. It's easier to achieve a perfect outcome using this trick. If there is snow outside, just place the hot pan on top of the snow.

Excellent melting cheese
Tried this for a different recipe and it had now become my secret ingredient for Mac and cheese. Makes it so creamy!

Exactly as we get in FVG
This is the cheese that comes from region my wife is from in Italy, the mountains in Friuli Venezia Gulia. Always look for this covering pictured above and you will get the real Montasio. If it is not, it is not real Montasio. The cheese we received was about 6 months, although in Italy you can find it as old as 18 months. It's perfect with any Italian dish - particularly polenta and frico. It's a bit pricey but well worth.

Creamy, flavorful, good in many recipes when more than mozzarella is needed.
It is a versatile cheese, has a nutty flavor, famous in Frico, can also be eaten as is, with fig jam, in grilled cheese, on focaccia.

Great Italian Cheese
In the past, I lived in Northern Italy where cheeses are named for the town they represent. Montasio is no different. It is a milder cheese with a flavor similar to fresh true Asiago. We enjoy it by itself as a complement to dinner or on a cheese plate with fruit. Great with red wine.
