Sharp, nice handle, perfect length for my hand
The Bearded Butchers recommend Victorinox boning knives on their Youtube channel, so I decided to try this one. A word of CAUTION, keep "the other hand" away from the knife while you are cutting the piece. These knives are very sharp and keep their edge longer than other knives I've tried.Note: I use a high-quality honing steel to keep my knives sharpened.

I have a ton of custom kitchen knives that cost a fair amount. After watching the Bearded butchers and listening to them talk about this knife I had to give it a shot. What a great knife for butchering game. holds an edge and is easy to handle

Great knife
The knife is great. Holds an edge well and sharpens up quick with a stone. Big downfall in my opinion is that it doesn't come with a sheath. It's hard to keep an edge nice without a way to properly protect it. For the cost of a simple sheath there's no reason why it's not included. For their inconsideration I say 4 stars. Otherwise it's definitely a 5 star product.
