Don't known. The plastic on the scraper is cheaply made.

Q: Why did my loaf come out doughy?

There can be many reasons depending on what the recipe is and what you mean by doughy. Most likely answer is that the temperature you baked the dough in was incorrect or was not in the oven long enough. You have to take to account what you use to make the dough. Are you using a Dutch oven, bread tin, or baking sheet? All of these use a different temp and bake time. Or if you left the bread to cool down in whatever you baked it in instead of placing it on a cooling rack? I hope this helped.

Q: Do bake with the dough in the basket, or is the basket just for proofing?

The basket is for proofing the dough. The dough will take on the shape of the basket and become a beautiful mound. I turn it out in parchment paper and bake in an enameled Dutch oven. This is a great set in my opinion.
