What is the diameter of the agave you sell?

I bought two last summer. They were about 8" across. One is in the ground and it's doubled in size. The other is in a pot and it's about 18" now with very sharp points. I recommend leaving them in pots for at least the first winter if your area gets below freezing. Parts of my in-ground agave are frost-bitten. Great plant!

Question 2

Why does my older plant have like a thick shoot out the middle 4 ft tires in the plant

 If the shoot is coming out from the top of the plant and the plant is at least 10 years old it could be the flowering shoot 
 If it is a shoot coming up from below the leaf level then it is a runner that will produce another baby plant

Question 3

Plants show a green color.  Do they turn blue older they get?

Yes
The color will also be dependent on how much sunlight they receive

When first planted out it's good to put up a little shade for them, but when they get large they can take full sunlight

That is when they develop a more blue gray color

Can they be grown indoors?

Agaves can certainly be kept alive indoors but they will not actually thrive unless they have plenty of sun like in a sunroom or a south facing window  
A compromise can be done by keeping one pot outside in the sun for a week and your second potted agave inside and just alternate from time to time.
