Does this produce any crema?

It does produce a little cream. But it helps if you don't put it in high heat. The slower it brews the most cream comes out. It is a great coffee stove top. The bottom is about 2 inches in diameter, so if you have a gas stove and it doesn't stay well, just put the coffee maker on top of a small skillet! Great conversation piece! Enjoy!

What type of stoves does this work on?

I use it on the small burner on my gas stove. It should also work fine on electric. It won't work by itself on induction because it's aluminum.
