can you fold this in half and sew it, or is it too thick?

We prefer to use it one layer but you can fold and sew it. It is soft and appropriate for sewing.

Do have the color gray in the 1 1/2 inch size? I see it pictured, but I can't choose that color.

Hello, Gray options is not in-stock at the moment but we are working on it. Kind regards

Does the red color run when laundered?

I didn’t buy red , I bought taupe and have not washed it
