Q: Can this be used to hold water at a constant boil (212F) or higher?

The set point goes up to 212oF but not higher. So It should be able to hold temp in the 211-213 oF range. I don't know if that would be a constant boil or not but it would be close.

Q: Does this unit can use another type of probe? What type of probe uses?

What "type" are you referring? This control uses a resistance type sensor, electrical interference may affect sensor signals. when extending the connected wire a shielded type wire is recommended. and increasing the gauge is also recommended. The probe cam also be used for liquids, but should be in a well.
