Can you stick the adhesives together to have a double sided maget?

Yes, you can remove the adhesives and attached to make a double sided magnet. Please note that the magnets does not has a lot of strength so be mindful of what you plan on attaching these magnets to.

will the magnets stick to themselves? i am wanting to cut two pieces and use them on either side of fabric to hold labels on.

They will stick to themselves, They will hold through fabric as long as it is not a thick fabric. I tried it on quilting cotton and my t-shirt, it worked for both of those, but any thicker would be iffy.

Can you use these sheets on both sides that you are putting together?

One side is sticky and one side magnetic. I’m sure you can stick them together using both sticky sides to get a magnet on both top and bottom.
