Could this work on butcher block counter without staining?

It does leave a wet ring. I would not try wet poultice on butcher block. There are other alternatives.

will this remove a hot sauce stain?

This stuff is amazing if directions are followed. Have never used on hot sauce stain but would surprised if it didn't work.

Would this work on an ink stain?

Sorry. No this would not work on ink. Wet Poultice is for oil based stains.
