Chickpea flour is an acquired taste.
I used this flour to make pasta (1/2 cup flour & 1 egg) in my attempt to eat healthier. The taste profile wasn’t what I preferred and the mouthfeel was a little dry. Mixing, rolling out and cutting caused some of the noodles to break. So, the next batch of pasta I used half chickpea flour and half Italian wheat flour with a little bit of dill seasoning. Definitely a fan of that batch. It was more pliable and easier to roll out. It had a nice chew, good flavoring and I used it to toss in my Thai noodle chicken salad. Delicious! I think the flavor just takes some getting used to, so my review is totally subjective.

What people should know is that this is the most awesome flour to thicken soups and make gravy. It is a healthy protein that your body can digest and utilize. Difficult to find in stores, however.
