Other gauges make you input the temperature. Isn't this less accurate if you're not including that information in the calculation?

I think pressure is more meaningful than temperature. If the pressure is in the recommended range (when the trigger is released), and the air from the vents feels cold, then the charge is good. I did have temperature indicators that came with the previous charging hose. They turned color to indicate that the air from the vent was cold enough. If the pressure is right and the air is not cold, then something else is wrong.
