How many qt jars can be canned in this pressusre canner?

7 quarts jars. 10 regular mouth pints jars. I currently today have 20 pints of pork canning (i have an additional metal plate like the one that goes on the bottom ) 10 pints on the bottom and 10 on the top rack. You can not double stack quarts. This is the best canner I have owned

How many Quart and pint jars does it hold?

I would not put in more than 9 regular mouth pint jars per level, for a total of 18 jars. When you put in 10/level the jars get wedged in and there's a risk of jars cracking, based on my experience. I've been canning for 50+ years and am on my third 23-quart pressure canner just my opinion.

Can this canner be safely used on a glass-surface range? If so, what is the smallest burner on which it can be safely used?

The issue people have with using large vessels on glass top ranges is that if the vessel is larger than the burner ring, it could transfer heat past the area where the glass has been properly tempered for high heat (outside of the burner ring). This could cause a failure in the glass top surface. I would check with your range mfg as well as inly cook in a burner that is the same diameter as the vessel you're using.

how pressure is regulated

The pressure is actually regulated by a weight that sits on top of the vent pipe. The canner comes with a weight for 15 PSI, but Presto has weights for 5 & 10 PSI. You may also manually regulate the pressure by monitoring the gauge and controlling the heat under the pot.
