Are any/all of the components dishwasher-safe?

These are the instructions. Simply wash with water and dish soap after the stone drops down to room temperature, wipe out the water and let it air dry. That's all I did ....pretty simple. Don't think I'd put bamboo in a diswasher and I don't know how much water the stones can absorb. So to be safe I just hand washed as per instructions. These are a different and fun way to explore different cooking methods.....had a lot of fun with these. Purchased special hand mitts to be able to handle the heat and those worked nicely also.

Will it work to keep food hot\cold? Can you put it in the freezer?

Yes Make sure it is cool and dry before you put it in the freezer.

Can I order the bamboo platters and stainless steel trays separately? The set only comes with one.

In order to remove the stone easier from the 500 degree oven, can I put the stone on an iron skillet for heating in the oven?

Yes, that's perfect. Please remember to use oven glove when removing it.
