I bought this guar gum last June and have been using it every time I make ice cream.Guar gum is a thickening agent made from guar beans; it is not a chemical. Guar gum is good for improving the texture of ice cream. Ice cream can form ice crystals during freezing, which can make it feel gritty. Guar gum helps prevent the formation of these crystals, resulting in a smoother and creamier texture. I am using it in the Ninja Creami ice cream maker. Game Changer
I recently invested in an ice cream maker and struggled to achieve my desired consistency without high-calorie, full-fat ingredients. After doing some research, I found that guar gum is a common thickening agent for ice cream because it handles cold better than xanthum gum.I use equal parts 2% milk and almond milk in my pint base. The simple addition of 1/4 teaspoon guar gum seriously made all of the difference; for the first time, I had no ice crystals. Better yet, the it’s actually thick and creamy like real ice cream (not soupy).Couldn’t recommend this guar gum more.
