Humm, and interesting question. Having lived in Spain 4 years I found it was common to eat without cooking, for example as an appetizer. I always thought of it like pepperoni. In the USA I use it in paella and it is cooked there but primarily to release the seasoning and oil prior to cooking the other ingredients (chicken, etc.).

As long as you don't open the packaging, then it would have to be consumed or refrigerated or discarded.

I'd say more spicy than hot. I think you will like the flavor. Be aware that the sausages are kinda on the small size. About 1/2 the length of a traditional hotdog.
