How long does it last until it's used by date?

Keep it in the fridge and take out what you need each day, it will last until the date shown. I made a mistake and took it out and left it in the cupboard, it was OK for ages but near the end of the date shown, it was not rising as well. I think it might even go past the date if stored in the fridge.

Can this be used to make bread?

Yes I use it with a bread machine, it great! once opened put in an air type container and keep in the fridge or it can loose its ability to rise as well.

should this be dissolved in water first or not?

I use it for bread making , I either add it straight if the recipe says to or dissolve it in water if the recipe says to. It works either way :)
