I don't know about this stuff much. It was called for in a recipe for some gluten free pita bread. It works fine and I got it packaged well and fresh. Not something I use on a daily basis, but worked for the recipe I used it in.

This makes all my GF breads so much softer & fluffier. I highly recommend you look into adding this to your GF baked good for improved texture!!

Did you know it is estimated that 2-6% of the population has allergies to corn??? Tapioca starch is a GOOD alternative because it is extremely rare that people are allergic to tapioca. I'm one of those allergic to corn and it is nice to know I can find substitutes like this for cooking. It's somewhat of a substitute for modified corn starch (which is a no-no for people with corn allergies). Because it doesn't require cooking, I use it to thicken fruit sauces, and as an emulsifier for salad dressing.
