Great bang for your buck
This knife will take a beating and come back strong. I received the 8" chef as part of my knife kit, and after using wusthofs in kitchens I can say that what the Mercer reps say really is true. The price difference is simply because Mercer doesn't advertise, they don't pay celebrity chefs to use their knives. They have the quality and I would say better fit and finish quality than the other German knife Brand's I've tried for a lesser cost. Same steel, same edge retention but inexpensive

Excellent knife
Have to say I love my Mercers I have purchased recently. Have high end Wusthof and Henckels and I am just as happy with these if not more actually. These are a true value without having to feel like you skimped in the slightest. If I had to do over....these would be all I would purchase. Save yourself money.....give these a try. Highly recommend!

Should have used a full-cover packaging shell
The blade looks fine, but the handle came with minor scratches and dents. I guess itโs because the packaging plastic shell doesnโt cover the handle. Iโll keep it as it doesnโt affect the performance much but it is a bit annoying. Update: I used it once and it's super sharp out of box. Good value.

Great Boning Knife
Needed some knives for my kitchen that weren't too expensive, but still a quality product and Mercer is exactly that.

Perfect knife for processing large fish
I use this at work to cut up mahi mahi and other larger fish. It holds an edge very well, and it is very attractive. It has virtually no bolster, so that you don't have to grind the bolster down when you are sharpening it. This is certainly one of the best knives for the price.

Pretty darn good!
We have a set of Henckels knives and the handle on the boning knife was broken. I thought I'd get a replacement from Jeff. In my search I found this maker, Mercer, with very good reviews. The price was a lot better and looks and qualities were the same. This feels and, so far, performs like the more expensive knife.

Nice!
Love it! Bought it to replace the low-buck "one-man" Henckels. Factory sharp, unusual, but true. Still stone-sharpened it. Love the flex. Damn near dangerous.
