It depends on how thick you want to lay this sugar sprinkle on the cake. I would buy 2 jars just to be safe.

Making whipcream, will this sugar disolve and turn the cream slightly pink?

Yes,it probably will. I use these for cake pops,and when applying them onto warm icing, like almond bark if it's very "wet" the color will run just a tad. The sugar still holds its sparkle. I hope this helps.
