Popping in to say what this is like-- basically caramel flavor with the richness and texture of white chocolate. Mind the temperatures you'll be expecting during the delivery. I ordered this and some of their ruby chocolate, which I've had before, and the quality's always been good. I think that if you're looking to make something unusual with a caramel-like ganache, or truffle, etc, where you can't use actual caramel, or you want to add a bit of fanciness, these are a good choice.I will say, they're -very- flavored, as in, they carry a lot of aroma, one, but if you were to say, eat a mouthful by itself, I find it a little overwhelming, and when consumed this way, I do find that it tastes synthetic. None of that is a bad thing, imo, because with couverture like this, I would want to put it with something else, not just straight up eat it lol. I don't know that I'll order it again, but I feel like my curiosity was satisfied, and although it's been a while since I made some fancy chocolates, this is a nice and unexpected kind of addition to the toolkit.

This chocolate melts very smoothly and has a great flavor of caramelized white chocolate and almost a hint of coffee. I'm already looking for white chocolate recipes to use this in. I would highly recommend it for anyone bored with regular white chocolate and looking for a more complex flavor. The only downside would be if you need the pure white color. When melted down and mixed with heavy cream it still has a very deep caramel color.
