Crispy light chip shop style batter
Given up trying to make batter. This is fantastic and always produces great crispy batter on a nice piece of cod, dipped in flour first. Tried lots but this is always reliably good. Another tip if using a small home fryer. Don’t use the basket. Just drop it slowly into the oil. Helps clean up and the fish doesn’t stick to the basket!! Enjoy.
