Q: what is the difference between diastatic vs non-diastatic malt?

Diastatic malt contains the enzymes alpha-amylase, beta-amylase, limit dextrinase, and alpha-glucosidase. These enzymes convert starches to sugars, which yeast can then consume. From the King Arthur website, non-diastatic malt is "similar to diastatic, but the naturally occurring enzyme is not active." Diastatic malt in solution can be de-activated with heat.

Q: Why is this double the price than on King Arthur website? Do you get two, is it different?

King Arthur charges 9.95 shipping so it's not cheaper. At all . Amazon is.

Q: what is the shelf life after it has been opened?

I purchased it two years ago and never opened it. It became a solid brick in original sealed package. I would conclude, use it soon after opening.

Q: Is this the same as dry malt extract used by homebrewers?

I use it to make bagels... looked online and there are so many different malts/dry to liquid to non... etc., my guess is it is not the same. just a guess though.
