This version of Palm Sugar is slightly sweeter than others I have tried and slightly more treacle in format, but seems to act well as a sweetner with lower GI index.

However, the container is a bit hard to work with—it’s tricky to get the sugar out, which can be frustrating during cooking. I do a lot of Thai cookery and it is so difficult to find Palm sugar locally. This is a large tub so will last.
