This is a knife!
As I do a lot of sea fishing, and I was enjoying a rather productive period, catching several plaice or bass every trip out, I decided to treat myself to a new filleting knife. I read a few reviews and watched some filleting demonstrations on the internet and decided on the Victorinox flexible filleting knife. When the knife arrived it was quite sharp, but a couple of strokes on a smooth wet stone and it was like a razor, I just needed some fish to try it out on now. My next trip produced seven plaice and a flounded, having left them in the fridge over night to firm up, I started filleting the next morning, the knife worked perfectly, removing the fillets cleanly from the bones. The flex is all important and the knife has just enough, with out being too flexable. All in all a great knife, that holds an edge well, I would recommend one to any body who is looking for a filleting knife.

Very good for the cost
I had a bit of difficulty finding a knife that was truly flexible. This is what I was looking for. I've noticed much cleaner slices in boneless poultry than I could get with my old knife. I realise that's probably not what this knife is intended for; it's also been very good for prepping the occasional fish.I don't feel confident enough to risk resharpening it yet, but it arrived very sharp a year ago and it still feels sharp enough after, on average, fortnightly use.

It's a great very, very sharp knife
I got it few days ago and used it yesterday [14 April 2016]. It's a great very,very sharp knife. I did not use it to fillet fish [because I like to cook with the bones]. I used it to prepare the mackeral fish [with bones]. It cut through the the mackeral very, very easily. Also I also used it to do the rest of the cooking: cutting the onions, ginger, garlic as well. It's very sharp that you can get very thin slices of all. I like it and hope the sharpness stay. Very good service and price from the vendor.

Perfect fish fillets
I use this knife to fillet rainbow trout and salmon etc. It is fantastically sharp, just the right length, lightweight and really makes light work of it. The flexibility of the blade also helps to keep the blade close to the bone to make sure you don't waste any precious fish.Easy to clean by hand (wouldn't risk the dishwasher with this) and keeps its sharpness well.Recommended!

As the blade is thin it cuts smoothly and is easy to get sharp
Not only filleting, I use this for carving and boning. As the blade is thin it cuts smoothly and is easy to get sharp. The first use I has for it was separating pork ribs into portions and intended to cut down to the bone before using a cleaver to go through the bone and accidentally cut half way through some of the bones without blunting the knife. The handle is made from hardened plastic with a slight textured surface so it is no problem with grip even when wet and covered in fish scales. This has replaced all my professional chef knives as my go-to knife of choice.

It's a Victorinox
Always great value for money. As a chef it a decent price for a quality blade and will last many years as long as it is looked after, even with heavy use. Never in 30 years working in kitchens have I had an issue with a Victorinox. I just keep losing them due to others misusing the knives or walking off with them.
