Cracking knife!
Okay, I'm a professional chef of over 20 years experience and have always used Wusthof knives. Mainly due to them being lovely and heavy which suites my style.I now own two of these knives because they are exceptionally good. My main use is for pastries, doughs, cakes... it's amazing also for breads, sourdoughs. The uses are endless and you would be very satisfied if buying this knife at this price. As with all the similar Victorinox range, they are light and comfortable in a smaller hand - their exceptional value for money and it's not too heart breaking it does drop and shatter. (in 5.5 years of my first one of these being thrown around various commercial kitchens, I never had so much as a scuff). The reason for buying a second was not due to any wear and tear, it was more so to carry one separate in a baking kit and one in my usual knife kit.

Handle is pine not rosewood
Great knife. I did have reservations that this knife was genuine because the sleeve said pine not rosewood and also the model number was not etched on the blade. I sent a query with photos direct to Victorinox. They forwarded it to the uk distributor and they replied promptly as follows:“ We are the UK distributor for Victorinox and we have been forwarded you enquiry.I would say your knife is definitely genuine. The model number is not always applied to the blade.With regards to the handle Victorinox stopped using Rosewood some time ago. Rosewood in now an endangered species. Amazon have not updated their listing which is not good at all so please feel free to challenge them on this. Victorinox have started to use pine in their handles.”I fully support the change to pine for the reason described so I will not mark it down for that. I can’t upload photos but the handle is the same in colour as shown in the listing, presumably it is stained.

I'm a chef with 15years experience. This is a good useful knife that's hard to beat for price. The handle will be hard at first but softens with usage to become more comfortable. The blade will need sharpened after about 5years then it's good for another 5 years. This knife is a durable workhorse for many a chef
