No you cannot project onto a GreenScreen

Would this green screen be wide enough fit two ten year olds to sit In front of it and have the green screen be fully behind them?

It really depends on your setup. When I use this, I only really have enough space for myself when I'm sitting down in front of my desk. The green screen is designed for individual use. However, I think you can still make it work if you put green fabric in the the surrounding areas.

How easy would it be to fit castors? What are the dimensions of the feet so I know what type, and size, of castors to buy.

No due to the feet fold flat for storage ,It is light enough to move without the need for castors

Is this the "correct" green for a default chroma key? I bought a similar product but it's very slightly off-green and gives a fuzzy result on screen.

Without doubt its the correct green, I use Elgato screen for a background with Zoom sessions and the results are excellent. Fuzziness may be caused by poor lighting so check that first!
