Is this ground, leached acorn meal, or something more processed?

Starch is not flour. It is a byproduct of the flour. Look at the nutrients - no fat and no protein. That means this is not acorn flour. Starch is the fine sediment that forms at the base of leached tannins from acorn meal.

I can't zoom in close enough to read the nutrition information. Are we sure this is 100% acorn meal, not combined with anything?

Can I make bread from this?

Sice I have to eat gluten free and I don't like the commercial gluten free bread,I've experimenting for a while and here is the result: I'm using a mixture of three parts rice flour, one part corn starch, one part potato starch, one part tapioca flour and two parts acorn flour. The acorn flours gives the flavor of whole wheat bread. I tried acor flour by itself but it doesn't rise properly and I didn't enjoy the taste. I add a teaspoon of ground caraway seeds for more flavor, olive oil, salt and baking soda as needed. Bake at 350 F. I hope my answer helps

Do you use it like regular flour in a recipe?

Acorn flour is strongly flavored had has no gluten. You certainly could not use it in a bread or pizza dough, but you could savely use it to replace buckwheat flour in a recipe that called for that. i;m sure you could replace a little of the white flour in a cookie recipe with acorn flour.
