Excellent balsamic. Not harsh like the fake balsamic vinegars are. Balsamic vinegar is not all the same; research before you buy. I recommend this brand.

Tastiest Flavor of Sherry Vinegar
So I'm nuts about sherry vinegar. Nuts about flavor and how sherry vinegar can't draw out the most subtle flavors and soften the harshest. Magic, nah! Just great, old world, slow made sherry vinegar. Used for centuries in Spain. Had it once and got hooked. Then I went on my sherry hunt and bought 3 different kinds, then got 6 more. For flavor to cost this is far and away the best!!Prepare to fall in love with your vinegar! Share it with friends or maybe don't because they just may want 2nd helpings of WhatEver you put this on.HINT: feel free to mix it with a wine or champagne vinegar. Regardless, you'll enjoy the experience. And no, I have no affiliation w/this company. Do love to cook!!

Alright.
I had bought a xeres vinegar from Arvum years ago and it was delicious. This one is of inferior quality, but it is still good to cook. Sherry vinegar is famous in Spain and all gourmets love it for its nutty taste. Unless you know sherry vinegar producers, you are condemned to buy the commercial version of it, which is, maybe less than balsamic, but still, a pale version of what it is in reality unfortunately. Time is a fundamental factor when it is about vinegar and so many other things. Sherry vinegar needs time in oak barrels to develop its inimitable aroma and divine taste which is incompatible with our desire to have everything now, even when we cannot afford it. That being said, this one is ok for the price and commercial quality knowing we are in the USA, far away from Jerez, and that most of the people do not care about the real taste anyway. I put mine in some salads and gazpacho, and it was alright.

Just the right flavor - none of that strong astringency that one often gets from some vinegars, but good sherry flavor.

Real Spanish Sherry
It is a good vinegar to make gazpacho; not all of them will give you the real flavor. I am happy with it; maybe a little bit on the expensive side.
