Good cookbook for those with PKU
I like the vegan recipes, especially hummus. There is also a lot of information about PKU. My brother had PKU & died in a nursing home from a heart attack when he was 55 years old.😠My sister had brain damage caused by PKU because the PKU test was not developed until she was 2 years old. My sister lived in a group home for the disabled for years. My sister spent the last months of her life in the hospital. She was transferred to nursing home rehab center. Then she fell out of bed & hit her head. She died one day after her 63rd birthday. My mother died the same year on my sister's birthday. We had their funeral mass together in church. It was during the Covid Pandemic. My mother died in the hospital. It was so hard to visit my mom & sister during the Pandemic.😠I have been on vegan diet. My sister's doctor said that I should be retested for PKU. I was tested in the 1960's when I was a baby. I am waiting for my PKU test results that I finally had done a few weeks ago. If my PKU test is positive, I will have to modify my vegan, WFPB diet by using this cookbook. There are some good smoothie recipes. I will have to stop eating tofu, beans, nuts, peanut butter. 🤦
