does it work to protect from burning yourself on hot wires?

Not 100 percent certain but I don't think so that's not what's it's intended for. I wouldn't try it I use it to hold sublimation paper on while I heat press

A roll of this was included in my heat press machine, but what is it for? I've made some shirts already. It didn't involve this tape.

This is mainly used to tape your image down if the item has any chance of sliding. Such as on tumblers. Corners of T-shirts, hoodies etc. it’s a heat tape so when you apply heat it won’t burn! ☺️

can this be used on oven racks? My oven racks do not fit as the side walls have bowed. Is it food safe?

I would not recommend using it where food may come in contact. This is just me personal opinion. The chemicals used to make it sticky may be caustic when heated & not consumable.

How thick is the tape?

I don't have an actual micrometer gauge measurement of the tape, but it's very thin. It's also quite tough, and does an excellent job for the application it's intended for.
