Americans Best Seasonings.
I was a Butcher at some Major Supermarkets in the Deep South for Many years, and a few years back after transitioning to a different work environment, I stumbled upon A.C. Legg Seasonings and I was surprised by the Quality. Don't get me wrong Deep South Seasonings are Great, however A.C. Legg is a Step uP if your a Do It Yourselfer when it comes to Sausage and Bratwurst making. My wife and son are Avid Deer and Hog hunters and you guessed it, I do the processing. If you have your own Meat Grinder and Sausage Stuffer and TIME of course, then A.C. Legg has a Seasoning for you. The Cajun, Hot, Original Mild & Maple are my personal favorites. Their Bratwurst I tweak a little by adding a Southern Kick to it by adding some Sweet and Spicy Jalapeño peppers and Crushed Pineapple to make a Sweet Heat Style Bratwurst that'll make ANY Northern Smile. Look No further, because A.C. Legg is simply the Best.

VERY DISAPPOINTED AT FIRST -- More of a taco flavor by itself
But I found that if I mix this with Tony Chachere's Creole Seasoning at 50/50 the combination for venison sausage is so delicious it is addictive.

Good Flavor
This seasoning had a good flavor. The taste was not as strong as the smell coming straight from the spice bag. It is somewhat distinct and has some heat. I thought it was borderline subtle flavor. I'm not from Cajun country or even the south so I have no idea how authentic the flavor is. But it does taste good and is a repeat. I used this at the rate of 13.6 grams per pound. This has 9.7 grams per Tbsp so 1 Tbsp + 1 tsp or 1.5 Tbsp per pound of meat will get this in the right ball park and can be adjusted from there. Personally I might adjust upward slightly. LbsOfMeat X 1.4 = Tbsp of seasoning to use.

Great flavor
I use this seasoning in most everything and Amazon is the only place I’ve been able to find it in the last 20 years! Excellent flavor rubbed on chicken, pork and burgers. Use in soups and when cooking dry pinto beans. The flavor is not overpowering as some Cajun seasonings can be and not over salty. My whole family uses this and I am talking about sisters, cousins, 2nd cousins, aunts….I highly recommend!

Weak flavor
Had to use 1 1/2 times the recommended seasoning to meat ratio. It was very bland the first time I used it so I reduces the pounds of meat to make the seasoning volume higher! We like strong robust flavored sausages!
