Yes you chop them and cook in any meal , not as strong as a onion.

Is it good to plant for spring onion?

Pickling shallots are not spring onions. They are small round onions which you peel then put into jars in such as a pickling vinegar, until they are ready to be eaten. Spring onions are entirely different.

Sounds like a lot of shallots. Can I both pickle them and also grow them in containers as I do with shallots this time of the year?

Pickle them by all means but growing them this time of year is a now now unless your in Australia but in this country plant on the shortest day dig up on the longest well that's what my dad told me about 70 years ago
