How do I make the choice of which cover I want

Hi there, you would need to contact us directly as the price will change depending on what grating you decide. This listing is only for ACO Hexdrain complete with Galvanised Grating and does not give the option of different gratings. I'd be happy to help if you could contact us directly through Amazon or email sales@scotia-supplies.com. Many thanks, Britteny

What is the fall on the bottom channel (to enable the water to drain away) and how do you maintain a fall when you join multiple sections together?

when you lay (install) the channel you need to put it at a gentle angle to allow it to drain.

What are the dimensions ?

length 1000mm x width 130mm x height 80mm

Can the galvanised steel grate be separated from the actual channel?

Yes, the steel crate can easily be separated from the channel. It simply clips in and out. No problem.
