Warming, just a little creamy, and with a pleasing crunch on top, this casserole gets a toss with my Secret White Sauce to add comfort-food appeal while keeping it light. I promise your whole family will love this one, but you’ll be the only one who knows the secret ingredients (bone broth, cauliflower, zucchini!) that make it both nutritious and super delicious. This dish is great for using up leftover grains. Serves 6 to 8. CHEESY QUINOA AND RICE BAKE Ingredients Extra Virgin Olive Oil Cooking spray 3 cups cooked quinoa 3 cups cooked brown rice (page 219) 2 cups Secret White Sauce (page 263) ½ teaspoon sea salt 1½ cups grated Gruyère cheese (about 4 ounces) ¼ cup grated Parmesan cheese 2 teaspoons Super-Sassy Seasoning (page 117) Preheat the oven to 375°F. Coat an 8 by 10- inch baking pan with cooking spray. In a large bowl, combine the quinoa, rice, white sauce, and salt and mix well to coat the grains with the sauce. Stir in the Gruyère. In a small bowl, mix the Parmesan with the Super-Sassy Seasoning. Top the casserole with the Parmesan mixture. Bake until the cheese has melted and the top is lightly browned in places, about 40 minutes. Remove from the oven and let sit for 5 to 10 minutes before slicing and serving. Swap It Out Choose another grain such as millet or spelt for the quinoa or rice. Or try black rice in place of the brown rice. Use any melting cheese you like, such as Cheddar, Monterey Jack, Mozzarella, or Gouda. Scrumptious recipes!
I love this cookbook! Laila’s Louisiana heritage shows through in a delightful way. I saw her Jumbalaya recipe in a newspaper and tried it. It was wonderful! I then bought her book. Her Gumbo was great. It was my first time to make a rue and it worked fine. I love her brown rice recipe. It turned out perfectly. Her spice mixes are handy and compliment her recipes along with everyday fare you may fix. I love that she puts nutrition at the forefront of what she does. You do not have to sacrifice deliciousness with her recipes just because they are nutritious. Her tips on nutrition are of great value. If you enjoy cooking and yummy results you will enjoy this book.

I enjoyed this cook book
The recipes are delicious and easy to make. I change a few ingredients on some of the recipes, but other than that, they were all delicious. You will not be disappointed.

Great cookbook
I tried my first recipe although it didn't turn out as expected, all the ingredients were all in my pantry. Easy to find ingredients nothing too fancy or hard to find. The directions were clear and easy to follow. It seems her recipes are health conscious with low sodium but you can add more sodium without destroying the dish.

Book full of great recipes with swap out suggestions.
I was watching a new show, The Good Dish. Laila Ali was the guest Chef. After watching the show I immediately googled Chef Ali to find she had a book for healthier meals. I'm so happy and pleased that I purchased her book. Every recipe that I’ve followed has turned out delicious. I also bought her spices, but as of yet, have not used them. But looking forward in making more of her recipes using her spices.

Excellent recipe book
Tried more than five recipes from this book, and each one produced superb dishes with raving reviews from my dinner mates. I'm looking forward to trying out a few more recipes.

Healthy Food Cookbook
I have not tried any of the recipes yet. Will so so after a while - busy now. Bought it because it is full of healthy recipes that l saw on the Dr. Oz show. Will know more later.

healthy and easy to prepare meals
The recipes are delicious, healthy and easy to prepare meals, for any day of the week. Leila provides lots of information on how to incorporate super foods, the health benefits of them and there's even a resource page on where to order the superfood items to ensure the best quality. The photos are lovely too! Definitely much more than a cookbook, it's a guideline towards a healthy lifestyle!
