You will NOT like the taste. You WILL appreciate what it does.
Everyone talks about how this tastes great, how it helps with indigestion, how it's a German secret weapon... Two of those things are true. If you like Fernet Branca and like to spend a ton of money to "enjoy" herbal bitters, sure. This is not what it's for. It IS good to slam if you had just a touch too much to eat. More importantly, it is AMAZING if you are about to get sick (i.e. throw up) and you hate doing exactly that. Within 20 seconds, the bitters do science-y things and tell your body to "stahp it." Also, fun fact... Fernet Branca does just about the same thing, if you want to spend a little less.

You shouldn't eat too much, but if you do . . .
Underberg is labeled as "a natural herb bitters taken for digestion,...not a beverage....Not to be sipped, but taken all at once and quickly because of its aromatic, strong taste." You have been warned! It is 44% alcohol, slightly less than Angostura. It comes only in tiny, brown, straw-paper-wrapped 20 ml bottles (about 2/3 oz), sold three to a box. Whereas Angostura comes from Trinidad & Tobago, Underberg is from Germany. Like Angostura, Underberg's ingredients include gentian, a bitter plant extract with components that trigger a sequence of digestive processes to help deal with too much food. The flavor of gentian is evident in Angostura but much less so in Underberg because it includes "a blend of aromatic herbs and spices from 43 countries" and no sugar, caramel, or artificial flavors. In 1824, in Angostura (now Ciudad Bolívar), Venezuela, Simón Bolívar's German surgeon general created an herbal cure for his troops' stomach aches and fevers. In 1875, when things had gotten too hot in Venezuela, Dr. Siegert's three sons moved the business to Port of Spain, where it still produces Angostura using the original secret recipe. Hubert Underberg created his cure for indigestion in Rheinberg, Germany, in 1846, and the fifth and sixth generations of his family still own and operate his business, still in the same town, still using their own secret blend of herbs and botanicals from 43 countries. They also practice a secret method that Hubert called “Semper Idem” (Latin for "always the same"): a three-step process of slow, cold extraction with alcohol; blending with well water; and aging in Slovenian oak casks. Everybody should try it at least once!
