How deep are these (top to bottom)?

The bread pans are 2 and 3/4 inches deep, if you measure on the perpendicular. The sides have a slight outward slope to them so if you measure along the slope, it adds a few millimeters to the height. The slight slope helps the bread make a smooth exit from the pan.

What is the top Interior size. Not overall size

11 3/4 x4 1/2 inches (at the top) with the over all size they will fit in my toaster oven with just a little space between them.. But I had to bend the handles up to do it and they worked fine.. I do 1 rise in the pan so the bread will crown high over the top and half way I have to put foil over the top so there not cooked to much on the top.. With the size and the length I was afraid it would not cook in the middle but it was fine coming out soft and fluffy .. You have to make the dough for 3 loafs of normal pans to make 2 loafs in these..  (it is easier to store leaving more space in my bread box)

Which is the max oven temperature?

They are very good quality baking pan i very satisfied most I used for baking bread which temperature is 450f  baking for one hour.Very easy take out nothing stick in the bottom or sides don’t need baking paper or butter before baking.So far I’m not use for baking otner things.This baking pan is worth money and after baked it looks how new .Definitely I recommend this product and is worth to waiting for them ,takes longer for delivery.

Can a person use for baking an angel food cake without it spilling out onto the oven?

I bake a good bit, but I've never baked angel food cake. I thought angel food was always baked in a large round pan, deep, with a large circular stem in the center. The pans shown here are specifically made for bread so I don't think they would work for angel food cake.
